Meatball Pizza

Ingredients:
Frozen meatballs, 5 per pizza
Boboli (personal size)
14 oz. Prego spaghetti sauce
1 tsp. Italian seasoning
1 tsp. garlic powder
1 tsp. sugar
Shredded mozzarella cheese
Shredded cheddar cheese
Other various toppings to taste: onions, peppers, mushrooms

Directions:
In a saucepan, over medium heat combine spaghetti sauce, Italian seasoning, garlic powder, and sugar. Meanwhile, place frozen meatballs on a microwave safe plate. Microwave until heated, checking every minute. While the meatballs are cooking, chop the additional toppings such as: onions, peppers, mushrooms, etc. When meatballs are heated through, remove from microwave and cut in half. Assemble the pizzas by spooning sauce over the Boboli crust then layering the meatballs and any other toppings you choose. Then sprinkle mozzarella and cheddar cheese on top.

Place the prepared pizza directly on the oven rack and bake at 400 degrees for 8-10 minutes, depending on how crispy you like your pizza crust.

Velvet Chicken

Ingredients:
6-8 chicken breasts, boiled and chopped
1 can cream of chicken soup
8 oz. sour cream
1/2 c. margarine, melted
8 oz. block of Velveeta, shredded
1 sleeve Ritz crackers, crushed

Directions:
Combine chicken, soup, and sour cream. Spread in a greased 9 x 13 pan. Sprinkle shredded cheese over chicken, then top with crackers. Pour melted margarine over top of crackers. Bake at 350 degrees for 30 minutes.

Gram's Meatballs

Ingredients:
2 lb ground beef
5 slices white bread, crumbled
1/2 c. milk
1 Tb onion powder
1 tsp salt
1 tsp pepper

Directions:
In a medium bowl, combine all ingredients. Use a cookie scoop to shape into meatballs. Place meatballs in a microwave safe baking dish and cover. Microwave on high for 3 minutes, turn meatballs and continue cooking for 3 minutes, then turn meatballs, etc... Continue cooking until meatballs are no longer pink. (This should take about 12 - 14 minutes) Drain.

When the meatballs are done you can add them to spaghetti sauce, beef gravy or a combination of 2 cans cream of mushroom soup and 1 pkg onion soup mix.

Ramen Noodles - Mommy's Way

Ingredients:
1 pkg Ramen Noodles
1/2 Tb margarine

Directions:
Fill a small saucepan with 2 c. water. cover and bring water to a boil. Break noodles while still in pouch then open the pouch and remove the seasoning packet. Put the noodles in the boiling water and cook for 3 minutes. Remove from heat and drain all but approximately 3 Tb of water. Stir in butter and seasonings. Enjoy!

Kaylea's choice for Ramen Noodles is either Roast Beef or Roast Chicken.

Grammy's BBQ

Ingredients:
1 lb ground beef
1 pkg hamburger buns

Sauce
1 small onion, chopped
1/2 c. ketchup
1 1/2 tsp Worcestershire sauce
1 Tb vinegar
1 Tb yellow mustard
1 tsp paprika
1 tsp celery salt
1 tsp chili powder
1 Tb sugar
1 Tb brown sugar
salt and pepper (to taste)

Directions:
In a skillet cook onion in a small amount of oil until soft. Transfer to a 2 qt stock pot. Add the remaining sauce ingredients to the stock pot and simmer over low heat for 15 minutes. While the sauce in simmering, brown the ground beef in the skillet. When the beef is done add it to the sauce and continue simmering on low for about 5 minutes.

Serve on buns and add a salad or one of Kaylea's favorites ~ Macaroni and Cheese or French Fries.

Porcupine Meatballs

Since this is Kaylea's all time favorite dinner, it is only right to make it the first entry on her Blog.

26 oz tomato soup
1 lb ground beef
1 lb ground turkey
2 c. instant rice, uncooked
2 eggs, slightly beaten
1/2 c. onion, chopped
dash of garlic powder and Lawry's season salt
3 Tbs oil
1 1/2 c. water
2 tsp. yellow mustard
2 cloves garlic, minced

Mix thoroughly 1/2 c. soup, meats, rice, egg, onion, garlic powder and Lawry's. Shape into meatballs (about the size of a golf ball). In a skillet, over medium heat brown meatballs in oil. Watch carefully, so they don't get too brown. When done pour off fat. Blend remaining soup, water, mustard and minced garlic in a bowl. Pour over meatballs and simmer over low heat for 20 minutes, or more. Stir occasionally.

We serve these with a spinach salad and green beans.
